Lemon-Garlic Shrimp with Cheese Ravioli

Ravioli, those miniature pockets of goodness is my favorite type of pasta. My kids love anything to do with pasta (sometimes I think they have Italian blood in them!) and cheese and when you combine both in cheese ravioli, it's like heaven to them. This lemon-garlic shrimp preparation is easy and also my favorite. To add some green to the dish, I use broccoli (sometimes I like grilled asparagus) but any other greens are fine as well. It is easy to make you can have complete meal in about 30 minutes.

Before you start doing anything, get a pot of salted water going on the stove to cook the ravioli in. Also, get another small pot of salted water heating to blanch the broccoli. When the broccoli is tender, shock them in cold ice water to stop the cooking process. Do not overcook the broccoli as they will lose their vibrant green color and turn into mush. You'll need the following to cook the lemon-garlic shrimp:

1lb. shrimp (either shell-on or -off is fine)
8 cloves garlic (chopped fine)
1/4 medium onion (small dice)
1 head broccoli (cut into small florets)
4 large button mushrooms (sliced)
2 stalks garlic chives (chopped fine)
Juice from 1 lemon
1 1/2 cups chicken stock
1 tablespoon white wine
Salt & pepper to taste
Parmesan cheese for garnishing

Start by sautéing the onions until they are soft. Turn down the heat to medium and cook the shrimp and mushrooms for about a minute (you do not want to overcook the shrimp). Add the garlic and sauté for another 30-45 seconds as you do not want to burn them. When the shrimp have turned pink, remove them to a plate and deglaze the pan by adding the chicken stock, white wine and lemon juice. Let the liquid come to a boil and then bring it down to a simmer. Taste and season with salt and pepper. According to your own preference, you can add more lemon juice if you want.

Just before serving, add the shrimp, garlic chives and broccoli to the sauce and heat them up. Arrange the cooked ravioli on a plate, scoop the sauce together with the other ingredients and garnish with parmesan cheese and you have yourself a delicious lemon-garlic shrimp with cheese ravioli for dinner.
